IL TRAPPETO

There are dozens of underground oil mills all along the Salento area, which date back to around the 15th and the 17th century. Unfortunately, not all of them are accessible to visitors.
'

These mills, known as the “Trappeti”, were used to produce lamp oil, which was considered the  pinnacle of Salento’s production at that time; today, this area represents one of the most relevant  olive oil producers in the world. Tons and tons of olives were dropped from the streets of the Old  City and rural areas into underground tanks, where hundreds of people worked tirelessly and often  without seeing the sunlight for days and days. They collected the precious liquid that gushed from  the millstones in stone spun, towed by mules or other animals. The production took place  underground, in order to guarantee the right temperature and a constant degree of humidity in the  air. The oil surely benefitted from these conditions; on the other hand, they weren't that good for its  producers. Our oil mill dates back to the 16th century, and we will be proud to let you visit it during  your stay, giving you all the information about this side of our city's life throughout the past  centuries.
